Homemade sauerkraut

Shred a whole head of cabbage. The size of the sauerkraut is a personal preference, you can shred it fine or coarse. For 10 minutes squeeze the shredded cabbage until it is sitting in its own juice in the bowl, pack into glass containers, topping of each jar with a tin foil spacer to keep the cabbage below the salt water brine (1 tablespoon of salt to one cup of water). After just a day you will start to smell the familiar smell of sauerkraut and after 15-20 days its ready to refrigerate and enjoy.

Albanian Stuffed Eggplant

Ingredients:
2 Eggplants (halved), Tablespoon of garlic, One Leek, 2 Tomatoes, Lemon Zest
Salt, Pepper, One Pepper of your choice, Parmesan Cheese, 4 tablespoons Bread Crumbs,
Paprika, White Wine
Scoop out interior of eggplant leaving a hollowed half. Squeeze excess juice from tomatoes, Dice Eggplant, Leek, Tomatoes and Pepper and saute with garlic, butter or olive oil, de-glaze with white wine, reduce for a few more minutes, remove from heat and two tablespoons of breadcrumbs, let cool. Broil or roast hollowed out eggplants, fill with cooled mixture, season with salt, pepper and paprika, top with bread crumbs and Parmesan cheese and bake at 400F for 30-40 minutes.

Creamed Kohlrabi

Ingredients:

Kohlrabi or some other vegetable
Onions
Leeks
Butter
Cream
Seasonings
Julienne Kohlrabi and other vegetable ingredients, chop the onions fine, Chop Leeks in half inch disc and then slice discs in half, Saute all the vegetables until tender, season as you wish, add a few tablespoons of butter, when melted add a splash of cream, simmer to reduce. Serve

Robber Steak

Ingredients:
Beef (Cubed)

Paprika
Olive Oil
Shallots
Onions
Peppers
Put 3-4 tablespoons of olive oil into a bowl, stir in beef cubes, let marinate as long as you wish. Cut up shallots, onions and peppers. Organize them on kabobs, salt and pepper to taste. Cook at 425F for 25-30 minutes depending on how well done you like them.
